Sugar in the Italian kitchen and the European one in general is an important player with a rich history. It is usually added to sweets, baked goods but it also brings out the flavour of some sauces (when just a pinch gets added). Sugar and coffee go hand in hand in Italy, although it is optional, but a sweet espresso in the early morning sunshine is always a welcome start to the day.
