The rind is thin and elastic; the internal texture is soft, buttery, white or slightly straw yellow in color and with irregular holes. The sweet and delicate flavor is reminiscent of cream and freshly milked milk. Excellent as a table cheese, it also lends itself very well to multiple recipes.
