Spicy Eggplant with Minced Pork (Italian fusion)/ 意式鯷魚魚香茄子煲

Spicy Eggplant with Minced Pork is a well-known traditional Chinese dish, but in this recipe, we twisted it with some Italian ingredients.

Ingredients 材料:

250g minced pork 免治豬肉
1-2  Medium Eggplant 茄子
3 cloves Garlic, sliced 蒜頭, 切片
1 tbsp Nduja sauce 莎樂美香腸抹醬
2 Anchovies 鯷魚
1 tbsp Anchovy Colatura 鯷魚魚露
Parsley, for garnish 西式芫荽
Water 水

Instruction:

  1. Clean and slice eggplant into thin portions. Soak in mild salt water (enough to cover) for 15-20 minutes. Pat dry with paper towel and set aside.
  2. Heat pan and add 1 tbsp oil. Stir fry garlic with medium heat until fragmented then add minced pork and anchovies until cooked and add Nduja sauce.
  3. Add the chopped eggplants to the pan and mix well with high heat. Add some sugar and water to balance out the saltiness. Cover the pan with lid and let it simmer for around 5 mins with low heat.
  4. Garnish with parsley and enjoy!

煮法

  1. 將茄子洗淨切條,浸鹽水約15-20分鐘,再以廚房紙巾印乾備用。
  2. 用平底鍋熱油,用中火炒蒜片至金黃色後,便加入免治豬肉炒,然後再加入莎樂美香腸抹醬炒勻。
  3. 加入茄子後轉大火將食材炒勻後,加入糖及水調味。蓋上鍋蓋以細火焗5分鐘。
  4. 關火,加入芫荽後便可以上碟。
